Orange Cake

1 3/4 cups SR flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1 tbs white vinegar
1/3 cup oil
1 tsp vanilla essence
Zest and juice of 2 oranges
3/4 cup water

Put all ingredients into a bowl adding the wet ingredients last.
Mix thoroughly with a whisk until all combined.  (dont over mix at it will result in a rubbery cake.
Pour into a lined cake tin and bake for about 30 -40 minutes in 190 degree C oven. 
Cake is done when skewer comes out clean.
Ice with orange icing.
Very moist!

Orange icing

2 cups icing sugar
Orange juice.

Add enough juice to make an icing consistency.  More juice can be added if it is too dry.
A bit of zest in the icing makes it very pretty!





Slow cooker Creamed rice!  (approx 3 hours)

1 1/2 cups of long grain rice
6 cups of milk + 1 cup extra (if required)
1 cup sugar
1/4 tsp ground cinnamon
2 pinches of salt
1 tsp vanilla essence

Put all ingredients into the slow cooker.  Turn onto high for 2 hours and then down to low for the last hour. Stir every now and again, particularly towards the end of the 3 hours.

You may need to add some more milk (the extra cup) towards the end of the cooking time.  It really just depends how wet you like your creamed rice.

Serve with stewed fruit if desired and gorgeous hot or cold.

You can also add double the quantity of cinnamon if you like (I personally found it a bit strong, so I cut the quantity down by half)

If you dont have a slow cooker, you can also do it on the stove, in a heavy bottomed saucepan over a very low heat. (will take about 45 min)

Chocolate Slice


185grams butter (I use Nuttelex)
1 cup plain flour
1 cup coconut
1/2 cup sugar
1 tbs cocoa
1/2 tsp vanilla essence

Choc Icing

1 1/2 cups of icing sugar
1 tbs cocoa
Boiling water


  • Preheat oven to 180 degrees
  • Melt butter in a bowl
  • Add the rest of the ingredients to the melted butter and mix well
  • Pour into a lined slice tray and spread out evenly
  • Cook for 10-15 minutes at 170 degrees
  • Cool in tin


To make the chocolate icing, mix the cocoa and icing sugar together and add enough boiling water to make a thick icing.  Mix vigorously to remove any lumps.

When cool, ice with chocolate icing and sprinkle with coconut.
