1 3/4 cups SR flour
1 tsp baking powder
GOOD pinch of salt
2 tsp caster sugar (I just use normal sugar)
1/2 cup grated cheese (a good half a cup)
1 lightly beaten egg
1/4 cup tomato paste
3/4 cup milk
1 onion finely diced
3/4 cup diced mushrooms
300gram shredded ham (cut smaller)
60 grams butter
1 tsp minced garlic
2-3 spring onions thinly slliced
- Preheat oven to 210 degrees (190 fan forced)
- Spray or lightly brush a 12 hole muffin tin
- Sift flour, baking powder and salt into a bowl and add the sugar and cheese
- Melt butter in a frypan and add the onion, mushrooms and garlic
- Cook over a low heat until onion has softened
- Add the shredded ham and garlic and heat through to infuse the flavours - Cool slightly
- Meanwhile mix the lightly beaten egg with the tomato paste and milk and stir thoroughly
- Add the ham, onion and mushroom mix to the flour mixture and combine well
- Add the spring onions
- Then add the tomato paste mixture
- Stir til just combined - batter should be pretty lumpy
- Spoon into muffin tin and cook for 8-10 minutes or until golden brown
- Loosen with a bread and butter knife or a spatula
- Let cool on a wire rack.
These are delicious warm with some butter!
